TURMERIC TOFU SCRAMBLE
Chop your favorite vegetables (try eggplant, tomatoes, peppers, broccoli, spinach, kale, zucchini, carrots, sweet potatoes or whatever works for you). Begin sauteeing, then add crumbled tofu (a silky, firm variety works best). Add turmeric, chili powder, cumin, garlic powder and cayenne for flavor. Cook for about 10 minutes or until veggies are all cooked. Serve with bread, fruit, salad for an easy breakfast, lunch, or dinner!
