Spa Salad
I call this salad a Spa Salad just because I feel like it’s something they would serve at a spa — hydrating, energizing, colorful, and simple yet flavorful. This salad is great because there’s no cooking required, it’s totally customizable, and it offers the perfect balance of light and filling on summer days.

Add —
summer veggies like cucumber, tomato, carrots, and raspberries
a protein source like chickpeas (rinsed from a can or cooked from scratch) or tofu
a healthy fat like avocado and hemp seeds
a flavorful summer dressing like peach vinaigrette
