Crunchy Salad with Peanut Dressing
CRUNCHY SALAD 🥗 I loveee the texture and flavor of this simple salad I always call “crunchy salad.” It’s so easy to make — here’s how:
💚FOR THE SALAD:
Add 1 cup shredded carrots, 1 cup finely chopped purple cabbage, 1 cup finely chopped lettuce, and 1/2 cup chopped scallions (green onions) to a large bowl.
💜FOR THE DRESSING:
Combine 2 tbsp peanut butter, 2 tbsp soy sauce or Tamari, 1 tbsp maple syrup, 1 tbsp miso paste, juice from half a lime, and 1 clove of chopped garlic in a bowl or jar. Blend with an immersion blender until smooth. (You can also use a regular blender or whisk vigorously with a fork 😊)
Toss salad with peanut dressing, top with crushed peanuts, and serve with tofu, avocado, rice, rice noodles, sautéed veggies or anything else that strikes your fancy. 🧡
